CIUDAD DE MÉXICO, 4 octubre 2018.- Cocineras tradicionales procedentes del Estado de México, Guerrero, Hidalgo, Michoacán y Veracruz y Mayoras de 18 restaurantes El Portón se enfrentaron en un concurso culinario Mano a Mano, en el que hicieron gala de conocimientos, experiencia, creatividad y técnicas para presentar el Mejor Platillo de Rescate, Mejor Platillo de Innovación y Mejor Platillo Dulce en el Instituto Culinario Coronado, campus Tlalnepantla.
Mejor Platillo de Rescate: “Ayotl del Campo”, elaborado por el equipo integrado por Patricia Acevedo, Cocinera tradicional de Chilpancingo, Guerrero, y las Mayoras Bertha López Álvarez (Suc. La Huerta), Luz Leticia Castillo Ortiz (Suc. Santa María) y Florencia De La Cruz (Suc. La Finca).
Mejor Platillo de Innovación: “Cerdo en salsa de xoconostle con champiñones”, del equipo formado por Cristina Martínez, Cocinera tradicional de Acaxochitlán, Hidalgo, y las Mayoras Rosa Gloria Martínez Rosario (Suc. Toreo), Margarita Porcayo Pérez (Suc. Vía Morelos) y Nadia Guadalupe Cartas Villalobos (Suc. Las Antenas).
Mejor Platillo Dulce: “Dulce de camote con paqués (figuritas de pinole con piloncillo)”, preparado por Juanita Bravo, Cocinera tradicional de Angahuan, Michoacán, y las Mayoras Antonieta Millán Tepec (Suc. Pachuca), Silvia Villafranca Rangel (Suc. San José Tecámac) e Iraís López Gómez (Suc. Alamedas).
El encuentro fue promovido por Gloria López Morales, presidenta del Conservatorio de la Cultura Gastronómica Mexicana en coordinación con ALSEA y la Dirección General de Culturas Populares, Indígenas y Urbanas, de la Secretaría de la Cultura. Mientras que el jurado estuvo integrado por Rafael Eduardo Ramírez Landeros, gerente culinario de El Portón; Jorge David Martínez Rosseau, chef de Innovación y Desarrollo de El Portón; Gian Alfaro Espinosa, director del Instituto Culinario Coronado; Roberto Carlos Buccio Peña, chef instructor del Instituto Culinario Coronado; José Antonio Vázquez Medina, delegado del CCGM en San Luis Potosí; Deyanira Navarro Gallegos, delegada del CCGM en Durango; Raúl Guerrero Bustamante, delegado del CCGM en Hidalgo; Vicente Ortiz Ángel, restaurantero mexicano en Los Ángeles; Ana María González de Arroyo, chef propietaria del restaurante El Tajín y Ana Rosa Beltrán del Río, chef e investigadora gastronómica de Chihuahua.
